Rougail Saucisse
(French aromatic tomato and sausage stew)
Ingredients:
- 4 large ripe tomatoes chopped
- 4 onions diced
- A sprig of fresh thyme
- Freshly ground pepper
- Salt to taste
- 1 teaspoon turmeric
- 1 fresh chili pepper chopped (optional)
- olive oil
- 6 meaty sausages
- 6 cloves of garlic chopped
- Bay leaves
Instructions:
- Prick the sausages and put them in boiling water for 10 minutes, in the same pot that you will use to prepare the dish, to keep the flavors – then drain the sausages and set them aside.
- Heat some olive oil in the pot and fry the chopped onions and crushed garlic until they are soft but not brown.
- Cut the sausages into 1.5 cm pieces and fry them with the onions.
- After 5 minutes, add the chopped tomatoes and the herbs and chili.
- Mix everything together and simmer on a low heat, removing the lid from time to time to remove excess water.
- Serve with rice.
