We present to you the recipe for Rougail Saucisse  (French aromatic tomato and sausage stew)

Rougail Saucisse

(French aromatic tomato and sausage stew)

Ingredients:

  • 4 large ripe tomatoes chopped
  • 4 onions diced
  • A sprig of fresh thyme
  • Freshly ground pepper
  • Salt to taste
  • 1 teaspoon turmeric
  • 1 fresh chili pepper chopped (optional)
  • olive oil
  • 6 meaty sausages
  • 6 cloves of garlic chopped
  • Bay leaves

Instructions:

  1. Prick the sausages and put them in boiling water for 10 minutes, in the same pot that you will use to prepare the dish, to keep the flavors – then drain the sausages and set them aside.
  1. Heat some olive oil in the pot and fry the chopped onions and crushed garlic until they are soft but not brown.  
  1. Cut the sausages into 1.5 cm pieces and fry them with the onions.
  1. After 5 minutes, add the chopped tomatoes and the herbs and chili.
  1. Mix everything together and simmer on a low heat, removing the lid from time to time to remove excess water.  
  1. Serve with rice.
